High five for Friday

I still have no idea how to link to my cousin or to the original girl Lauren who made this high five for Friday post but I do it anyway!

5. Sunday was the first time that Jorge went to a new church with me, we have a church that we go to but while Jorge was in Afhhanistan I went to my childhood church. The exciting part was that we got to see my sweet friend Savannah get baptized! Watching her grow this past year has been such a blessing to me, she makes me want to do better and she tells me when I'm being "ugly" {my attitude has been ugly these past few months}. It's nice to have someone to keep you in check like that!

4. Monday we had mops, lately I have not been into it at all. Somehow in the last couple of months it became more of a burden then a fun thing for me. This Monday it was really good though! I really enjoyed it like I used to. I wasn't sure if I was going to go next semester or not but I recommitted myself to the committee and am praying for a FULL great year next year! I hate that I fell off the wagon this semester but again my attitude had a lot to do with it.

3. This week and every week I'm thankful for my hubby. He didn't do anything extraordinary this week but he doesn't have to bc he does so much for us every single day. I listen to so many of my friends who complain about the things their husbands don't or can't do and it just amazes me. I HATE when girls say "let me see if my husband can babysit"... Uhhhh it's HIS kid{s}!! I just don't get it. Jorge has never once complained about spending time with his kids and when he gets home he doesn't need "alone time" to get it together. I'm lucky to have a guy who loves his kids, wants to be with his kids and never complains! Plus he cooks amazing food and cleans better then anyone I know! Every girl needs a Jorge in their life! {but not mine! That wasn't an offer}

2. We have decided to rent out our house and go rent a bigger house for a year or so! This is really exciting for me! We already have a renter for our house we just need to find a house for us. With baby number 3 on the way we will just be too crammed in this house. We can't buy another house unless we sell or rent this house for a year or 2 soooo that leaves us to go rent any house we want! I'm not nearly as picky with renting as buying plus it gives us a chance to try new things, such as locations in town, pool, 2 story..etc. I think it will help us know what we want when we buy or build. We found a house that we love but when we saw it it was trashed. We are going to look at it again today... Crossing my fingers that it's a zillion times better! With 5 bedrooms we will have plenty of room for family to visit! *hint*hint*.

1. Monday I decided that it was time to potty train Juliana! So Tuesday morning we started! She did amazing!! Even through nap time and bed time she stayed dry! She has been ready to be potty trained for months not but I haven't been ready... That makes a huge difference! If mama ain't truely ready then it's not going to work! It's day four and by day 2 she was fully potty trained. I still need to see how she does at stores and while playing with friends but I have faith in her! Through the potty training I have felt much more bonded to her too, it's a great thing!

Favorite New Healthy Recipe's

Recently people have been asking for the recipes that Jorge and I have been making, so I am going to put some up on here. We got pretty much all of the recipes from Pintrest and they are HEALTHY and DELICIOUS!

I must admit that a lot of the recipes I improvised on, I just worked with what I had.. sometimes I only had lemon not lime so I would substitute or cayenne pepper instead of red pepper etc. a lot of the recipes that called for onions I left them out.

1. Hummus Crusted Chicken
This Hummus Chicken was SO amazing and SO easy! I just bought the hummus dipping stuff. I didn't make the veggies with it instead I made a quinoa salad which I will add the recipe below.
  • 4 boneless, skinless chicken breasts
  • salt and pepper
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 medium onion, chopped
  • 1 cup hummus, homemade or store bought
  • 1 Tbsp. olive oil
  • 2 lemons
  • 1 tsp. smoked paprika or sumac
Preheat oven to 450 degrees. Prepare one large baking dish or two smaller baking dishes with cooking spray.
Season the chicken breasts with generous pinches of salt and pepper. In a large bowl, toss the zucchini, squash and onion with olive oil until evenly coated. Season with salt and pepper.
If using one baking dish, place all of the vegetables on the bottom of the dish in an even layer. Lay the four chicken breasts evenly on top, then cover each chicken breast with the hummus so that the entire breast is covered. Squeeze the juice of one lemon over the chicken and vegetables. Then sprinkle the pan with smoked paprika or sumac. Thinly slice the remaining lemon, and place the slices in between the chicken and vegetables if desired.
**If using two pans, use one for the chicken and one for the vegetables.**
Bake for about 25-30 minutes, until the chicken is cooked through and the vegetables are tender. Serve immediately.
2. Spicy Salmon and Veggies
 This Spicy Salmon and Veggies was seriously to die for and again VERY easy! (I love easy!) I did make the veggies with this one I just left out the onions but the flavor was so good!
  • Nonstick cooking spray
  • 1 big lime squeezed
  • 4 garlic cloves - minced
  • 2 tsp. red pepper
  • 2 tsp. cumin
  • 1/8 c. chopped cilantro
  • 2 tbsp. olive oil
  • 2-4 skinless salmon fillets

  • 1 1/2 c. frozen corn, thawed
  • 1/4-1/2 Red bell pepper, sliced thin
  • 1/4-1/2 Yellow bell pepper, sliced thin
  • 1/4-1/2 Orange bell pepper, sliced thin
  • 1 Serrano pepper, sliced thin, seeds removed
  • 1/2 small red onion, sliced thin
  • Dash of onion powder and garlic powder
  • Freshly ground black pepper
Preheat the oven to 425 degrees. Cover a big baking sheet with aluminum foil and spray lightly with cooking spray. (Easy clean up, for the win!!)

In a small dish, mix the lime juice, garlic, red pepper, cumin, cilantro and oil. Dip the filet's in the mix and place on the baking sheet.

In a medium bowl, toss corn, peppers, and onion. Pour the rest of the marinade over the veggies, toss, and spread on the baking sheet. Dash some onion powder, garlic powder and black pepper over the veggies for some extra flavor.

Place baking sheet in oven for 10-15 minutes until fish is cooked through and veggies are starting to brown. Serve and salivate!

3.Southwestern Stuffed Peppers
The Southwestern Stuffed Peppers were really good, Jorge had been wanting to make them so I bought everything and he made it. He said it was a little time consuming but totally worth it!


  • Olive Oil ( I used Tahitian lime olive oil)
  • 1/2 lb lean ground turkey breast
  • 1 cup chopped onions
  • 1 heaping tbsp of homemade taco seasoning (or you can use the packaged type if you like)
  • 2 cups of cooked rice (any type you like – I like brown)
  • 3-4 organic bell peppers, halved and seeds removed
  • 1 can of black beans, drained & rinsed
  • ½ cup of organic frozen corn
  • 1 (15 -16 ounce) jar of salsa (my favorite is mango peach)
  • Shredded Cheddar Cheese
    • Toppings:
    • fresh cilantro
    • sour cream
    • sliced avocado
    Pre heat the oven to 400 degrees. Lightly coat the peppers with olive oil and roast in a baking dish about 20-25 minutes just until cooked thru. Remove the peppers from the oven and allow to cool until you can handle them.
    In a bowl add the taco seasoning, cooked ground turkey, chopped onions, black beans, corn and rice. Add in the jar of salsa and mix well.
    Carefully spoon the turkey mixture into each half of the bell peppers and place back into the baking dish. Cook the peppers for another 15-20 minutes or until the peppers are cooked all the way thru. Before removing from the oven sprinkle the tops of each pepper with shredded cheddar cheese. Place back into the oven just until the cheese has melted.
    Remove from the oven and top with fresh cilantro, avocado slices and/or sour cream just before serving.


    Quinoa Salad

    This Quinoa Salad is so delicious! I'm just going to give you the link for it, but I'm telling you its worth making! Its a great side and I liked it cold. I didn't use the jalapeno or shallot and I used a flavored quinoa but I'm sure its good no matter how you make it. It was very refreshing!

    Strawberry Mango Salsa
    This salsa was interesting, it was good but different. I wasn't sure what to eat it with so I made wheat tortilla chips with cinnamon sugar sprinkled on top.
    • 3/4 Cup Strawberries, finely diced
    • 3/4 Cup Mango's, finely diced
    • 1/4 Cup Red Onion, finely chopped
    • 6 Basil Leaves, finely chopped
    • 1 TBSP Fresh Lemon Juice
    • 1/4 tsp. Sea Salt
    • 1/4 tsp. Black Pepper
    Combine all ingredients and allow to sit in the refrigerator for a few hours, covered.
    Lastly for now.....

    Dried Strawberries

    These were really good but I need to figure out how to master them... they stuck to the pan really bad.. any tips would be appreciated about drying ANY fruits. I have found a new love with dried fruits but when you buy them in the store you get all the extra stuff that makes them not as healthy.


    • Strawberries
    • Salt and Pepper

    1. Halve or quarter the strawberries, depending on their size; place on a baking sheet; season with salt and pepper;
    2. Dry in the oven for three hours at 100° C / 210° F.

    Sandy Eggo

    My best friend of 16 years is FINALLY getting married! I don't say that bc she's a loser and couldn't find anyone until now I say that because she has been with her fiancee for 10 years! DyAnna and Steve met at the Naval Academy in Annapolis in 2003. When they graduated they both were able to go to San Diego. DyAnna went on to work with the navy while Steve continued his schooling by going to medical school. I'm sure you can imagine navy relationships have to be hard enough with crazy hours, deployments and everyday stresses but throw med. school in the mix and it just gets crazier. They decided to wait until Steve graduated to get married. I waited so patiently for all these years for a date to be set and then finally we had a date! May 12,2013! When she told me it seemed like light years away, yet here it is already!! I can't tell you how much I love these 2! They are the power couple that you see together and you can just see how in love they are, you would think that they just started dating.

    We are one month out from the wedding {which will be in Florida} so that means there had to be a bridal shower and bachelorette party! Being the maid of honor the planning fell on me which ended up being harder then I had anticipated. Mostly because we decided to have the party in San Diego and I obviously don't live there. Also I never in a million years saw myself being pregnant for her wedding or pre wedding events.
    Myself and another bridesmaid flew in to San Diego the day before the festivities started. On Saturday we met up with DyAnnas other friends and took off for Temecula! Wine tasting! A pregnant girls dream lol. I was actually really excited for this because I had never been and I wanted to see what it was all about. I didn't mind not being able to taste the wines. It was gorgeous out there! We were able to go to 3 vineyards {baileys, Mira monte and Briar Rose} we had lunch at Carols which was at Baileys. This was the bridal shower portion of the party. The girls got DyAnna gifts to pamper her including a full day at a number one spa in San Diego! We played a few fun little games such as "finish the vows" which ended up being pretty funny.

    After Temecula we drove back to the hotel and got ready for the night. We went to Lips, its a dinner and show with men who dress up like women. It was interesting to say the least. I had a lot of questions, but it wasn't the kind of place that you could ask those questions.. lol They dance and do impressions. Cher was the hostess and she was pretty hilarious. Dyanna had a great time so that's all that mattered.

    After the show we went back to the hotel and hung out. Unfortunately I was sick the whole weekend. I couldn't eat any of the delicious food and I was too pooped to go out that night.
    Sunday I was really sick and just wanting to go home and go to bed. I was able to hang out with DyAnna that morning and then fly out in the afternoon. Even with the sickness it was still a great time! Any time I get to spend with that crazgirl is always great!

    So that was my weekend in a nutshell! Oh and when Jorge picked me up he had chocolate covered pretzels for me!(I couldn't eat them.. but I did later that week!) and he had the house completely spotless!
    I'm lucky to have a best friend who is the same today as she was the day I met her 16 years ago. She's still just as fun, crazy, sweet and loving as ever before. I can't wait to see her get married in May!
